Clam Pasta with Sausage and Veggies, made with clam pasta, Italian sausage, and kale or broccoli.
My father enjoys watching cooking shows and is often inspired to try a new dish he sees being prepared in a show. For this recipe, he was inspired by chef Joanne Weir from her cooking show on San Francisco public television KQED. Joanne Weir used to work at Chez Panisse and now teaches cooking classes in town.
This easy pasta, sausage, parmesan cheese and rabe or kale recipe is super easy to make and delicious. We all agreed it’s a keeper!
Ms. Weir’s original recipe calls for broccoli crab, but kale is a perfect substitute. Kale can be quite bitter on its own, but there’s not a trace of bitterness in this dish. The kale emphasizes the flavors of sausage and cheese.

For even more spiciness, squeeze some lemon juice over everything before serving.
ingredients

1 pound (450G) sleeve or conchiglie pasta

Salt

1 1/2 cups (350ml) water or chicken broth

12 ounces (340G) italian sausagesweet or spicy or a mixture of both

12 ounces (340G) KaleBroccoli or other greens, chopped (if using kale or leafy greens, remove and discard the center stalk)

2 green onionschopped
-
6 cloves garlicchopped
-
1/4 to 1/2 teaspoon hot pepper flakes

1/4 cup (25G) fresh parmesan cheesegrated

Boil pasta in salted water:
Bring 2 liters of salted water to a boil (1 tablespoon of salt in 2 liters of water). Add the pasta and cook al dente according to package directions.

Boil the vegetables in salted water:
While the noodles are cooking, heat 1 1/2 cups water with 1/2 teaspoon salt in a saucepan until simmering. (Chicken broth can be used instead for added flavor). Add the kale or raven and cook 8 minutes or until tender. Strain and set aside.

Lightly fry the bratwurst:
While the vegetables are cooking, remove the sausages from the casing (if they are torn into pieces) and crumble into a large skillet. Heat over medium-high heat and cook gently until lightly browned, about 8 minutes. Using a slotted spoon, transfer the sausage from the skillet to a bowl and set aside.

Cooking Spring Onions and Garlic:
Add the chopped spring onions to the pan and sauté until soft. Add garlic and cook for another minute.

Combine Pasta, Onions, Sausage, Vegetables, Parmesan:
When the noodles are done, drain and add to the pan with the spring onions. Add the sausage and kale (or rabe) to the pan and toss to combine. Sprinkle with parmesan cheese. Add chili flakes to taste.
Note: You might want to try adding some sautéed peppers.
