Cheesy scrambled eggs with onions, thinly sliced ​​kale and shredded mozzarella cheese.

They say everyone gets their fifteen minutes of fame, maybe that goes for veggies too? If so, kale certainly has its time. Kale chips, kale smoothies, kale salads, kale is everywhere! This is the spinach of the 80s in kale form.

I personally couldn’t be happier. We love our veggies here – cabbage, kale, spinach, beets, Swiss chard. Anything that encourages people to cook with and eat more of these fabulously good and great tasting greens is fine with me.

Scrambled eggs, for example, go great with sautéed onions and kale. Stir in some grated cheese and spices, perfection!

We’re using mozzarella cheese in this recipe because I happened to have some on hand. Feel free to use your favorite melted cheeses – Swiss, Gruyere, Provolone, Cheddar. I use Italian seasonings, a mix of dried herbs, but you can easily use your fresh herbs of choice.

ingredients

  • 1 tablespoon Extra virgin olive oil

  • 1/4 Cup chopped Onion

  • prize red pepper flakes

  • 1 ounce fresh kaledestemmed and thinly sliced ​​(about 1 cup)

  • 4 big eggs, beaten

  • 1/2 Cup grated mozzarella cheese

  • 1/2 teaspoon Italian spice (dried rosemary, oregano, thyme, basil)

  • Salt and fresh ground black pepper, taste

method

  1. Sauté onions with paprika flakes:

    Heat olive oil in a non-stick frying pan over medium-high heat. When the oil is hot, add the chopped onion and red pepper flakes. Boil for a minute.

  2. Add Kale:

    Add the thinly sliced ​​kale to the pan, mix with the onions and olive oil. Cook for a few minutes until the kale has just wilted.

  3. Add beaten eggs:

    Reduce the heat to medium. Put the beaten eggs in the pan. Stir until the eggs start to set.

  4. Add cheese and season:

    Stir in the grated mozzarella cheese and Italian seasonings. Remove from heat and continue stirring a few times until cheese is melted and eggs are cooked. Season with salt and pepper.
