Have you ever used truffle oil in your kitchen? I think I have a new best friend in the kitchen. I don’t want roast potatoes other than tossed with some truffle oil.

Truffle oil goes particularly well with potatoes, as the starchy potatoes soak up the truffle flavor from the oil. These are just roasted new potatoes and onions, easy to make, hard to screw up, but with a few drops of truffle oil they taste out of this world.

ingredients

  • 1 lb small new potatoesscrubbed, quartered

  • 1 big yellow onionpeeled, cut into thin slices

  • 3 tablespoon Extra virgin olive oil

  • Kosher salt and fresh ground black pepper

  • Several shakes white truffle oilabove 1/2 teaspoon

method

  1. Preheat oven to 400°F
  2. Mix potatoes and onions with olive oil, salt, pepper:

    Place the onions and potatoes in a sturdy roasting pan. Pour olive oil over and toss well. Sprinkle salt and pepper generously over the potatoes and onions. Arrange the potatoes so they’re in a single layer in the pan.

  3. Roast meat:

    Put in the oven. Roast at 400°F for 40 minutes or until potatoes are lightly browned and cooked through.

  4. Drizzle with truffle oil:

    Place potatoes and onions in a serving bowl. Drizzle well with truffle oil. Throw to cover.
