How to cook asparagus

Oven Roasted Asparagus is one of the easiest ways to cook asparagus. Simply brush the asparagus with some olive oil, sprinkle with salt and pepper and maybe some chopped garlic and saute until lightly browned and tender.

If you want to spice up the roasted asparagus, after cooking, drizzle with a little lemon juice or balsamic vinegar or sprinkle with some freshly grated parmesan.

Tip for fried asparagus

Have you ever had fried asparagus become tough and fibrous? The best way to avoid this is to use the fat sticks for frying, not the skinny ones. The thin ones will dry out too quickly in the high heat of the oven.

For best results when roasting asparagus, use thick spears, not thin ones. The thin ones dry out too quickly and become tough and fibrous.

ingredients

  • 1 lb asparagus spears (thick sticks are best for frying)

  • 1-2 tablespoon Extra virgin olive oil

  • 2 cloves garlic, chopped

  • Kosher salt to taste

  • Freshly ground black pepper, taste

  • lemon juice or balsamic vinegar, to taste

method

  1. Preheat the oven and prepare the asparagus:

    Preheat your oven to 205°C. Wash the asparagus spears. If the ends are hard, snap them off and discard or save them. If you want, you can use a vegetable peeler to peel off the tough outer skin of the thicker ends of the asparagus.

  2. Drizzle the asparagus with olive oil, salt, pepper and garlic:

    Line a frying pan with foil. Arrange the asparagus spears in a single layer on the lined roasting pan.

    Drizzle with olive oil and brush the sticks all over with olive oil. Sprinkle with salt, pepper and minced garlic and rub over the asparagus spears to distribute them evenly.

  3. Roast in the oven:

    Roast at 400°F (205°C) for 10 minutes, more or less depending on your oven and thickness of spears, until asparagus is just lightly browned and tender when pierced with a fork.

  4. Drizzle with lemon juice or balsamic vinegar to serve:

    To serve, drizzle with fresh lemon juice or balsamic vinegar and sprinkle with grated Parmesan, if you like (skip if cooking vegan).
