Simple white bean salad with red onions, some lemon juice, olive oil, vinegar, herbs, salt and pepper.
My mother is a genius.
She throws together the simplest of ingredients, and they’re so good I have to get up in the middle of a meal to write it all down because, in her words, “If you like it, ask me now what I made in an hour.” I won’t remember.”
It would make an excellent picnic salad because you can make it a day in advance; The extra time just gives the flavors more time to sink into the beans. If you really have time, prepare the beans from scratch on the stovetop or in a pressure cooker beforehand.
It can also be put together at the last minute with basic pantry items. If you have fresh herbs available, you can use them, if not, dried herbs de Provence are also suitable.

1 (14.5–ounce) can of white beansdrained but not rinsed

2 tablespoon chopped Red onion

2 teaspoon wine vinegar (red or white)

1 tablespoon Extra virgin olive oil

1/2 teaspoon dry herbs of Provence (crumbled) OR 1 teaspoon of a combination of finely chopped rosemary, tarragon, thyme, and lavender

Let the onion marinate in lemon juice:
After you’ve chopped up the onion, squeeze a little lemon juice over it and let it sit while you prep the other ingredients. According to my mother, this takes the edge off the onion.

You can serve immediately if you’d like, but refrigerating for a few hours will help the flavors come together better.
