Need something different for dinner? This potato, spinach, and Italian sausage casserole recipe is perfect for a big family dinner.

We at Casa Elise are constantly trying out new recipes and even jokingly refer to our kitchen as the “test kitchen”. However, many recipes never make it onto this page because they are often just not good enough. In fact, some are downright awful.

If we find a good one, we declare it a “winner” and often do it again so I can get a good picture. This is one of those recipes. Not a big one for casseroles, I was surprised at how tasty this potato and sausage casserole was.

If you’ve ever had a hard time convincing a family member to eat their spinach, this is the recipe!

ingredients

  • 1 1/2 lb red potatoes (about 3 medium potatoes), peeled and cut into 1-inch pieces

  • 1 teaspoon Extra virgin olive oil

  • 8th ounces fresh spinachwashed, dried and gutted

  • 1/2 lb italian sausage (we like 1/2 sweet and 1/2 spicy Italian sausage), unwrapped, broken into small pieces

  • 1 large Red onion (Above 3/4 lb), peeled and thinly sliced

  • 1 small clove garlicchopped

  • 1 1/2 tablespoon unsalted butterplus extra to grease the casserole dish

  • 1/3 Cup heavy cream

  • 1 tablespoon Apple Cider Vinegar

  • hyphen nutmeg

  • 1/2 teaspoon Salt

  • 1/4 teaspoon pepper

  • 1 cup torn Gruyere or Swiss cheese

method

  1. Preheat oven to 400°F. Butter a 6×9 or 8×8 inch baking dish
  2. Boil potatoes until soft

    Place potato chunks in a large saucepan and add enough cold water to cover 1 inch. Bring the potatoes to a boil over high heat, then simmer over low heat. Cook until potatoes are tender, about 15 minutes.

  3. Boil the spinach

    Heat 1 teaspoon olive oil in a large skillet over medium-high heat. Add the spinach and cook, turning the spinach leaves in the pan with tongs, until wilted, about 3 minutes. Remove from the pan and let cool. Wrap in paper towels and squeeze out the liquid. Roughly chop the spinach.

  4. Cook the Italian sausage

    Wipe any remaining moisture out of the pan. Add the Italian sausage to the skillet and sauté over medium-high heat until lightly browned, about 5 to 6 minutes. Put the sausage in a bowl.

  5. Cook the red onions and garlic

    You will need 1 tablespoon of fat in the pan. So if the sausage produced that much fat, great, if not, add more olive oil until you have 1 tablespoon of fat in the pan. Heat on medium and add the thinly sliced ​​red onions. Cook until lightly browned, about 5 minutes. Add the garlic and cook a minute longer. Add the onions and garlic to the bowl with the sausage.

  6. Mash potatoes with butter, cream, vinegar, spices

    When the potatoes are done cooking, drain and return to the pot and mash with the butter, cream, vinegar, nutmeg, salt and pepper.

  7. Stir in the spinach and 1/2 cup cheese
  8. Bake

    Pour the potato and spinach mixture into the prepared casserole dish. Top with the sausage and onion mixture and sprinkle with the remaining 1/2 cup cheese. Bake until potatoes are very hot and cheese is golden and bubbly, 20 to 25 minutes. Let cool for 10 minutes before serving.
