A classic margarita with a spicy twist

This margarita a friend made for me was her attempt to get me to change my mind. And – shocker – it worked! The sweetness of the pineapple softens the tingling of the jalapeño.

And the edge of the glass? Lined with salt and tajín, a common Mexican condiment made from salt, chili, and dried lime. You can often find it in the condiments section or ethnic/Mexican foods section of your local supermarket.

Pro tip! In Mexico it is often seen sprinkled over fresh fruit such as melon or mango. I highly recommend trying it out for your next brunch or cookout.

Buy tequila that has been aged for at least two months and is labeled 100% de Agave. Tequilas that aren’t are often mixed with fermented cane juice, resulting in an overly sweet, lower-quality tequila with a lot more burn on the way down.

ingredients

  • 1/4 Cup kosher salt or other good quality salt for garnish (optional)

  • 3 teaspoon Tajin Spicefor garnish (optional)

  • Fresh lime wedgesfor edging the glasses and for garnishing

  • 1 jalapenosliced ​​(use more or less depending on how spicy you prefer it)

  • 1 1/4 cups old tequilalike reposado or anejo

  • 3 cups pineapple juice

  • 1/2 Cup Orange liqueurlike triple sec

  • 1/4 Cup lime juice

  • extra jalapeno Slice, pineapple wedges and lime wedges for garnish

method

  1. Prepare glasses:

    Combine the salt and tajín in a small bowl or plate. Next, take a glass (a cocktail or coupe glass will do, although a mason jar is just as easy) and rub the rim of it with a lime wedge. Dip the jar in the salt, turning once or twice to coat the rim.

  2. Pour the tequila:

    In a pitcher, combine the jalapeño and 3 tablespoons of tequila. Using a muddler (or wooden spoon or potato masher), mix the tequila and jalapeño together for about 10 to 15 seconds. This infuses some of the tequila with the spiciness and flavor of the chili pepper.

    If you want the heat to get stronger, keep mixing and tasting the tequila as you go. The more you injure the chilli, the spicier the flavor will infuse into the cocktail.

  3. Make the cocktail:

    Add remaining tequila, pineapple juice, orange liqueur, and lime juice and stir. Stir and pour neat or on ice into the prepared glasses.

    This can be done a few hours in advance, but not too much longer, as citrus juice tends to become a bit bitter after prolonged exposure to air.
