Peanut Butter and Honey Granola Bars

Homemade granola bars with peanut butter, honey, oatmeal and golden raisins.

One of my favorite things to eat as a kid was a peanut butter and honey sandwich.

Given how much I love the flavor combo, I thought I’d try making some granola bars with these favorites.

A little oatmeal, a little butter, a little peanut butter, a little honey, a 350° oven and hey, they’re good!

I ate a few bars for breakfast and a few for afternoon snacks every morning. who knew Simply.

These granola bars are on the soft (as opposed to crunchy) side. If you like, after slicing, you can put them back in the oven at 300°F for 10 minutes to firm them up a bit.

ingredients

  • 1 egg white

  • 1/2 cup honey

  • 1/2 cup creamy peanut butter (can be used in chunks if you prefer, makes a crumblier bar)

  • 1/4 teaspoon cinnamon

  • 3 cups Old Fashioned Oatmeal (do not use instant or steel cuts)

  • 1/2 cup (1 stick) butter, melted

  • 1/2 cup golden raisins

method

  1. Line a 9×13 baking pan with parchment paper so the parchment paper extends over the edges of the pan. Set the rack in the oven to the middle position. Preheat oven to 350°F.

  2. Take 1/2 cup of the oatmeal and pulse in a food processor until finely ground. Place this ground oatmeal in a bowl with the remaining oatmeal and cinnamon and stir until combined. (You can skip this step if you don’t have a food processor. Just continue with the full batch oatmeal recipe.)

  3. Either with a stand mixer or by hand with a whisk, beat the egg whites until fluffy. Beat in the honey. Beat in the peanut butter. Add the oat and cinnamon mixture. Pour the melted butter over everything and stir until well combined. Stir in raisins.

  4. Spread the mixture evenly over the base of the baking dish lined with parchment paper.

  5. Place in the oven and bake for 25 minutes until the top is nicely browned. Remove from the oven and let cool for 5 minutes. Cut into 12-16 bars with a sharp knife. Return to the oven, reduce heat to 300°F and bake for another 15 minutes. Remove from the oven to cool.

    Let cool completely before eating. Cooling is important for the bars to set, otherwise they might end up being a bit too crumbly.
