Have you ever seen a “bacon” avocado?
If you happen to see bacon avocados at the market, give one a try! They are exceptionally creamy and perfect for use in sauces.
While remoulade is usually made with mayonnaise, in this case we substituted avocado for the mayo and flavored it with lime juice.
This creamy avocado sauce is perfect to serve with salmon! Sear (or bake or poach) a salmon fillet and serve on the avocado tartar sauce.
Fried salmon with avocado remoulade
ingredients

2 big avocadoscut and peeled

3 tablespoon Freshly squeezed lime juice (can substitute lemon)

3 to 4 tablespoon Extra virgin olive oil

1 tablespoon shallots or green onion, chopped

1 tablespoon Parselychopped

1 teaspoon Dijon mustard, or to taste

salt and peppertaste

1 to 1 1/2 lb salmon fillets

Prepare the avocado tartar sauce:
Place avocado chunks and lime juice in a food processor or blender and puree until combined.
Slowly pulse in olive oil until you reach desired sauce consistency.
Add chopped shallots (or scallions) and parsley and pulse until well combined.
Place in a bowl and season with mustard, salt and pepper.

Fry salmon fillets:
Heat a tablespoon of oil in a frying pan over medium-high heat.
Season both sides of the salmon fillets with salt and pepper. Place the fillets in the hot pan and reduce the heat to medium.
If your fillets are skin-on, you can place the fillets in the pan either skin-side up or skin-side down. Laying the fillets skin-side up first makes it easier to turn the fillets without falling apart, since the raw skin will help hold the fillet together. Placing the fillets skin-side down in the pan to begin with will help crisp up the skin, which can be a tasty treat on its own.
Cook the salmon until it is about medium done, about 3-4 minutes per side.
