This 1-pot ground turkey and peppers recipe is quick and easy! Roasted ground turkey with onions, garlic, bell peppers and seasoned with chipotle chili.
I’m smiling as I write this. Why? Because nothing reminds me more of my mother than her ground turkey with peppers.
I have never eaten it anywhere but at home, not even in a school cafeteria where god knows they have served every other inexpensive meal known to man.
And you know what? It is Well. It’s cheap (especially ground turkey thighs, which have the added benefit of more flavor). It can be cooked in the time it takes to add some rice or noodles to it.
For years, she seasoned ground turkey with chili powder or chopped pickled jalapeños. These days, she likes to add the smoky flavor of chipotle powder.

Mama’s ground turkey and peppers
The method given is my mom’s “one pan” method because she only cooks a pound of ground turkey, enough for 4 people. If you are expanding this ground turkey recipe to serve more people, you may want to remove the veggies after they are cooked and set them aside while you cook the turkey, or cook the meat and veggies in two separate pans.

3 to 4 tablespoon Extra virgin olive oil

1 Cup chopped yellow onion

Some chopped greens off green onionsif you have any

1 Bell jar pepper (red or yellow preferred), chopped

2 cloves garlic, chopped

Kosher salt

1 lb ground turkeypreferably ground turkey drumsticks

1 teaspoon chipotle powder chili powder (or to taste)

2 tablespoon chopped fresh parsley or coriander
method

Sauté onions, peppers and garlic:
Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the chopped onions and peppers and cook until onions and peppers are tender, a few minutes.
Add the garlic and cook another 30 seconds.

Add ground turkey, salt and chipotle chili powder:
Push the vegetables to the edge of one side of the pan and position that side of the pan away from the stove and heat. The empty part of the pan should be directly above the burner.
Add another tablespoon or two of oil to cover the empty part of the pan. Add the crumpled ground turkey pieces to the pan, sprinkle with salt and chipotle or chilli powder.

Fry the turkey, then stir in the peppers and onions:
Cook the turkey, without stirring, until browned on one side, then flip the pieces to brown the other side.
Once the turkey is just cooked, stir in the onions and peppers and sprinkle with more salt and chili powder, if desired. Remove from stove.
Stir in freshly chopped parsley or coriander.
Serve alone or with steamed rice or noodles.
