Topping up the simple syrup with lime zest is a great way to add extra lime flavor to your lemonade.
ingredients

grated citrus peel from 1 lime (Above 1 tablespoon)

1 Cup lime juice (from about 4 to 6 Persian limes)

3/4 to 1 Cup granulated sugar

3 cups water

Several branches fresh mint

Making Simple Syrup:
In a small saucepan, bring the sugar, a cup of water, and the lime zest to a boil. Once the sugar has dissolved (which it should be when the water is boiling), remove from the heat and let cool for a few minutes.
The amount of sugar is a guide, it depends on how sweet you like your lemonade and how tart your particular limes are.

Strain lime zest:
Place a strainer over a bowl or wide-mouthed serving dish and pour in the simple syrup, straining the lime zest as you go.

Add lime juice, water, mint:
Add the lime juice and 2 cups of water. Taste for a sour/sweet balance. If it’s too sweet, add a little more lime juice. Add several sprigs of fresh mint.
Refrigerate or serve immediately over ice.
