Best Kale Salad Ever! A kale and Waldorf salad with apples, celery, walnuts, dried cranberries, and spicy mayo dressing
In the fall, one of our favorite things to make with the apples and walnuts from our trees is a Waldorf salad. Here’s a fresh take on this American classic—a kale twist.
In it, we have kale for the salad, dried cranberries for the grapes, and hold it all together with a tangy mayo dressing.
Well, we all know that leafy greens are good for you. But the great thing about using kale in a salad is that you can make it ahead of time, even a day in advance.
A dressing that would quickly wilt into a limp mess has a tenderizing effect on kale, making raw kale deliciously easy to eat.
The slight bitterness of the raw kale is offset by the sweetness of the apples and cranberries. The mayonnaise dressing with Dijon and vinegar helps lighten any flavors.
Kale Waldorf Salad
ingredients
Dressing:

1/3 Cup mayonnaise

2 1/2 tablespoon water

1 1/2 teaspoon smooth Dijon mustard

1 1/2 teaspoon Apple Cider Vinegar

Salad:

2 big Cute red applescored and chopped

1 Cup celerycut

1 Cup lightly toasted walnutsroughly chopped

1/2 Cup sweetened dried cranberries

2 cups (packaged) cabbage leavessliced (hard ribs removed before slicing)

Whisk together the ingredients for the dressing in a medium bowl.

Place apples, celery, walnuts, dried sweetened cranberries, and kale in a serving bowl.

Add the dressing to the salad and mix gently. Add more salt and pepper to taste.
