How to core and cut cauliflower quickly, easily and safely!
Do you prepare cauliflower by first cutting out the core and then breaking the head into florets? (No shame, that’s how I did it for 40 years until my friend chef Kathi Riley set me straight.)
There is an easier way.
Note that the cauliflower seeds and leaves are perfectly edible; The cauliflower seeds are similar to broccoli seeds. If you like, peel and slice them for snacking, or chop and cook like the florets.
How to cut and core cauliflower

1 head cauliflower
method

Pluck the leaves from the cauliflower base.

Halve cauliflower:
From the top of the crown, cut down through the stem.

Lay the cauliflower halves cut-side down on the cutting board and slice vertically again.

Place the cauliflower quarters on the cutting board and angle the knife to cut out the core.
Repeat with the remaining cauliflower quarters.

Pull apart the cauliflower florets.
