I grew up eating horseradish, sometimes called “German mustard,” as an accompaniment to steak and pork dishes. With dad’s German roots, it was no wonder that there was always a jar in the house.
These days, I suspect many people eat wasabi, a Japanese spice with similar effects, rather than horseradish; I just don’t see it that often anymore.
However, horseradish sauce, which is made from prepared horseradish and either whipped cream or sour cream, tastes great with steak or roast pork. Here’s a sour cream version.

Prepared horseradish has only three ingredients: grated horseradish root, vinegar, and salt. It’s easy to make your own (and there’s a link in the ingredients list on how to do it). But let’s face it, it’s often easier to buy store-bought, and that’s fine for this recipe.
Make sure you buy prepared horseradish and not horseradish sauce. If you’re not sure, look at the ingredients list. If there’s more than grated horseradish root, vinegar, and salt, don’t buy it for this recipe. Also check the front of the glass for heat indicators. Some prepared horseradish is “extra hot”. Unless you really love your horseradish sauce with tears in your eyes, you should avoid the extra spicy horseradish for this sauce.

How to store leftover horseradish sauce
Tightly sealed horseradish sauce should keep in the refrigerator for 5 to 6 days. The chives in this special sauce ensure a shorter shelf life in the fridge. If you omit the chopped chives and add them just before serving, they will keep in the refrigerator for 2 to 3 weeks.
