Tips for Baked Salmon
- First, use good quality salmon. The cheapest filet at the fish counter that looks like it has seen better days has seen better days. There’s nothing you can do to improve old fish. how do you say it The best way is to smell it. If it smells strongly of fish (or something worse), don’t buy it. I actually brought fish back to the market that didn’t smell right when I took it out of the packaging. Trust me you don’t want to eat it.
- Second, don’t overcook the salmon! It’s so easy to do. Don’t cook the salmon until it’s completely peeled apart, that’s overkill. When baked salmon fillets come out of the oven, they should still be a little thin in the middle. They continue to cook in the residual heat and are perfect to eat.

Baked salmon in honey mustard
If you haven’t already made honey mustard, simply mix equal amounts of honey and Dijon mustard.

1 1/2 to 2 pounds (680G to 900G) salmon fillets

3 tablespoon Honey mustard (1 1/2 tablespoons honey plus 1 1/2 tablespoons Dijon mustard)

3 cloves Garlic, chopped (about 3 teaspoons)

3 tablespoon Extra virgin olive oil (divided into 2 tablespoons and 1 tablespoon)

1 tablespoon lemon juice

1 tablespoon chopped fresh dill

Preheat oven to 400°F

Make the Honey Mustard Glaze:
In a small bowl, whisk together honey mustard, garlic, 2 tablespoons olive oil, lemon juice, dill, and salt.

Prepare the salmon:
Line a frying pan with aluminum foil. Brush the salmon fillets on both sides with olive oil. Place the fillets, skin-side down (if your fillets have skin), on the foil-lined pan. Using a pastry brush, brush the top of the fillets with the honey-mustard mixture.

Bake the salmon:
Place in the oven and bake at 400°F for 8 to 10 minutes, until just cooked through (don’t overcook the salmon!). It’s okay if the salmon is still a little thin in the middle, when you take it out of the oven the residual heat will cook it.
