Lack of fat in the chicken and overcooking are the two main reasons people end up with an ugly chicken burger, but we can solve both. With a few extra ingredients and a handy kitchen tool, it’s possible to grill and enjoy a juicy chicken burger.

How to shape chicken patties

Forming these patties will seem impossible once you mix all the burger ingredients together. The egg adds a lot of moisture to the mixture and it seems too sticky to shape. But no fear!

Spread extra breadcrumbs on a plate and add your burgers to the breadcrumbs. Coat the patties in the breadcrumbs and then you can shape them without the meat sticking to your hands.

Shape the patties into patties about 1/2 inch thick. Don’t worry about the dimple trick popular with beef burgers. Chicken burgers don’t shrink as much because they’re so low in fat. They hold any shape you put them on the grill.

Tips for grilling chicken burgers

Grilling chicken burgers is a little different than beef burgers. Here are some tips.

ingredients

For the lemon mayo

  • 1/2 Cup mayonnaise

  • 1 teaspoon Lemon peel

  • 1 tablespoon lemon juice

  • 1/8 teaspoon Salt

  • 2 tablespoon fresh chivesfinely chopped (optional)

For the chicken burger

  • 1 lb ground chicken

  • 1 big egg

  • 1 Cup breadcrumbsdivided

  • 1 clove garlicchopped

  • 1 teaspoon dried basil

  • 1 teaspoon dried parsley

  • 1/2 teaspoon kosher salt

  • 1/2 teaspoon black pepper

Serve

  • 4 Brioche Bun

  • 1 ripe avocadothinly sliced

  • 1/2 Red onioncut

  • 1 Middle tomatocut

method

  1. Make the Lemon Mayonnaise:

    In a small bowl, mix together the mayonnaise, lemon zest, lemon juice, salt, and chives. Wrap the bowl in plastic wrap and set aside until ready to assemble your burgers.

  2. Mix the ingredients for the chicken burger:

    In a medium bowl, combine the ground chicken, egg, ½ cup breadcrumbs, garlic, basil, parsley, salt and pepper until thoroughly combined.

    To form patties, pour the remaining 1/2 cup breadcrumbs onto a plate.

  3. Shape chicken breast fillets:

    Divide the chicken mixture into four even balls. Place one chicken ball at a time on the plate with the breadcrumbs.

    Lightly press the chicken ball into the breadcrumbs on both sides so it doesn’t stick to your hands. Repeat until all balls are coated.

    Shape each ball into an approximately 1/2-inch patty and repeat with the remaining chicken balls until all burgers are formed.

  4. Preheat the grill and add oil:

    For direct heat grilling, preheat the grill by setting gas burners to medium-high or distributing charcoal to create direct heat under the cooking grates. The temperature should be 450-500˚F.

    To make sure the burgers aren’t sticking, dip a clean kitchen towel or some paper towels in oil and quickly rub down the cooking grates with tongs. Alternatively, spray the grates with spray oil, but watch out for flare-ups.

  5. Grilling chicken burgers:

    Using a thermometer, grill the chicken burgers for about 4 minutes per side or until they reach at least 165°F in the center of the burgers.

    Halfway through cooking, flip the burgers with a metal spatula to loosen any stuck chunks of burger. The burgers are done when they have excellent grill marks on both sides and are firm when pierced.

    Try not to overcook the burgers or they may dry out.

  6. Grill buns:

    Grill the plain buns for 20 seconds and remove from the grill.

  7. Assemble Burger:

    Add a few sliced ​​chunks of avocado to the bottom bun. Top it with the grilled chicken burger, followed by sliced ​​red onions, sliced ​​tomatoes and a drizzle of lemon mayo. Serve immediately.
