Ham salad is a great way to use leftover ham. Mix diced ham, hard-boiled eggs, pickle relish, mayonnaise, onions, celery, peppers and mustard together for a great salad that you can use on sandwiches or enjoy on its own.

One of the best reasons to serve a ham for a holiday dinner or family gathering is the prospect of leftover ham, don’t you think? Ham keeps well and can be used for a hearty ham and bean soup, a pasta dish with peas or for a tasty ham salad.

How to use leftover ham in ham salad

Put it in a sandwich (or a bun!), eat it plain, or add it to macaroni. The basic ingredients of our favorite ham salad are ground or finely diced ham, sweet cucumber relish (sweet goes better with ham than dill I think), and hard-boiled eggs. Then add some for crunch (celery and/or paprika) and mayo to bind.

Add a little mustard and lemon juice to brighten the flavors, and maybe a touch of cayenne pepper for a nod to deviled ham or eggs.

The best ham for ham salad

Any cooked ham or ham steak will do for this recipe. If the ham has a sweet glaze, be aware that the sweet flavors will come through in the salad. To avoid the sweetness becoming a dominant flavor, trim off any glazed parts before dicing or grinding the ham.

How to store ham salad

Store the ham salad tightly closed in the refrigerator for three to five days.

Can you freeze ham salad?

We do not recommend freezing prepared ham salad as the mayonnaise may separate upon thawing. For future ham salad preparation, freeze diced or ground ham in a freezer-safe zip-lock bag or container for up to three months.

If you don’t have a favorite way to hard boil eggs, try steamed hard boiled eggs or Instant Pot hard boiled eggs.

To make ground ham, dice the leftover ham and either pulse it in a food processor or put it through a meat grinder.

ingredients

  • 2 cups finely diced or ground ham (about 3/4 pounds)

  • 3 big hard boiled eggschopped

  • 1/4 Cup sweet cucumber treat

  • 1/4 Cup mayonnaise

  • 2 tablespoon chopped green onion

  • 2 tablespoon chopped celery

  • 2 tablespoon chopped Red pepper

  • 1 tablespoon chopped fresh parsley

  • 2 teaspoon Dijon mustard

  • 1 tablespoon lemon juice

  • Big pinch cayenne, Optional

  • Salt and black pepper, taste

method

  1. Mix ham salad:

    Mix everything except salt, pepper, and cayenne in a large bowl. Taste and add cayenne, salt and black pepper to taste. Cool.

  2. Surcharge:

    Serve plain or with macaroni or in a sandwich in a hamburger bun, slider roll, kaiser bun, regular bread, in a pita or as a wrap. Good with lemonade on a hot day.
