The best cheese for grilled cheese

With my years of experience making grilled cheese, I have learned that using shredded cheese is the way to go as it melts more easily than slices or other cuts.

I like to use a medium-hot cheddar cheese for this recipe to make it stand up to all the other ingredients without overpowering them. But if you’re particularly indebted to American cheese for the stickiness that only it can give, I certainly won’t judge.

What kind of bacon to use

I give a range for the amount of bacon required because the size of a slice of bread is non-standard and you only need enough bacon for one layer so you get some in every bite. T he classic standard bacon piece (cooked so it’s nice and crispy) is best, but you can use any kind you like.

What kind of salad to use

What kind of tomatoes to use

For tomatoes, you want to use a variety that falls under the category some people call it cut tomatoes. They’re big, meaty, and perfect for slicing on sandwiches (hence the name). Some examples include Beefsteak, Brandywine or Mortgage Lender. Avoid plum tomatoes; They are more suitable for making pasta sauce. And as always, choose ripe, seasonal tomatoes whenever possible.

What kind of bread to use

Sourdough is my bread of choice because it has a lot more flavor than your regular white sandwich bread and still has the right structure for piling ingredients.

ingredients

  • 8 slices of sourdough bread

  • 4 tablespoons unsalted butter at room temperature

  • 8 ounces (2 cups) shredded cheddar cheese

  • 2 sliced ​​tomatoes (such as Beefsteak, Brandywine, or Cherokee Purple), sliced ​​into 1/4-inch thick slices

  • 8 to 12 slices of cooked bacon

  • 12 leaves of lettuce or other crunchy lettuce

  1. melt cheese:

    For each sandwich, spread 1 tablespoon of butter on one side of two slices of bread. Place bread, buttered side down, in a large skillet or on a griddle over medium-low heat. Sprinkle 2 ounces (1/2 cup) grated cheese evenly over both slices. Bake until cheese is melted and bread is crisp, about 2 minutes.
