Green beans with almonds and thyme
ingredients

2 lb (fresh or frozen) green beanstrimmed

1/4 cup (1/2 floor butter

1 tablespoon Dijon mustard

1 teaspoon garlic salt
-
2 tablespoon fresh thymechopped

1/3 Cup slivers of almondslightly toasted
method

Cook Green Beans:
In a large saucepan of salted boiling water (1 1/2 teaspoons salt per quart of water), cook the green beans until just crisp, about 5 minutes.

Shock the green beans in ice water:
Drain the beans and place in a large bowl of ice water to cool completely. (The ice water turns the beans a bright green color.)
Drain the beans well. At this point, you can make the beans a day ahead and store them in the fridge.
Alternatively, you can steam the beans for 5 minutes and proceed directly to the skillet.

Sauté beans with butter and thyme:
Melt the butter in a large, heavy skillet over medium-high heat. Stir in half of the fresh thyme (1 tbsp), the Dijon mustard, and the garlic salt into the butter.
Add the beans to the pan and toss until warmed through, about 4 minutes. Pour into a serving bowl.

Sprinkle with toasted almonds:
and the remaining 1 tbsp thyme.
