Spicy devil’s jam made from ham, celery, spring onions and pickled jalapeños.
Do any of you follow Mad Men? I occasionally watch an episode, more intrigued by the outfits and decor than anything else. (Wait, I recognize that tapestry! My mom used to wear dresses like this! My dad wore those skinny ties!) So delightfully retro. Like deviled ham.
I can well imagine one of those ’60s parties being served canapés with deviled ham. Back when I was a kid, I probably would have found a ham sandwich along with carrot sticks and a thermos packed in my Voyage to the Bottom of the Sea metal lunch box.
Deviled Ham with pickled jalapeños
ingredients

7 ounces boneless ham steak, cubed (about 1 1/2 cups)

1 small celery stalk, chopped

1/4 cup sliced pickled jalapenos

1/4 cup mayonnaise

4 teaspoons chopped green onions

1/4 teaspoon ground cumin

8 slices of white sandwich bread, derinded

1 1/2 cups thinly sliced iceberg or butter lettuce

food processor
method

Process the ham in a food processor until finely ground but not a paste. Remove from the processing machine in a bowl. Process the celery and pickled jalapeños and add to the bowl with the ham.

Fold in the mayonnaise and cumin. Stir in chopped spring onions.

Make sandwiches with the bread and the sliced lettuce. To serve, slice the sandwiches diagonally.
