Crispy, cheesy quesadillas come together in just minutes! To make this meal more complete, let’s add mushrooms to the mix. They prepare a quick snack or a complete meal with a salad or soup as an accompaniment.

At home, we always grab quesadillas when we’re hungry and in a hurry.

If you want to serve all your quesadillas at once, preheat the oven to 300oF. Place the already prepared quesadillas in a single layer on a baking sheet. Keep them warm in the oven while you make more.

ingredients

  • 2 tablespoon olive oil

  • 1 lb Cremini, button, or wild mushroomsor a combination, thick cut

  • 1 clove garlicfinely chopped

  • 1/2 bunch spring onionsthinly sliced

  • 1/4 teaspoon Salt

  • 1/8 teaspoon ground black pepper

  • 1 1/2 cups (approx 6 ounces) grated cheddar or Monterey Jack or a combination

  • Small handful fresh coriander leaves

  • 10 (6 inch) Corn Tortillas

Serve:

method

  1. Cooking mushrooms:

    In a large skillet over medium-high heat, heat the oil until shimmering. Add the mushrooms to the pan and cook, stirring occasionally, for 5 minutes, or until they release some of their moisture.

    Add the garlic and scallions to the pan and sauté an additional 2 to 4 minutes, or until the garlic is flavored and the scallions are soft. Add salt and pepper.

  2. Assemble and cook quesadillas:

    Wipe out the pan and set it on medium heat. (Alternatively, place a pancake griddle on the heat or heat an electric griddle.)

    Once hot, add a tortilla to the pan and sprinkle with 2 tablespoons of the cheese and 2 tablespoons of the mushrooms. Sprinkle with coriander leaves and another 2 tablespoons of cheese. Place a second tortilla on top and press down lightly.

    Fry on one side for about 1 minute, or until cheese begins to melt. Using a large spatula, flip the quesadilla and cook for an additional 30 seconds or until the cheese melts and the tortillas are lightly toasted with a few brown spots. Repeat with the remaining tortillas, cheese and filling.

    Alternative microwave method: Assemble the quesadillas as above. Transfer to a plate and microwave for about 1 minute or until cheese melts. Cut into quarters. (Your quesadillas will be softer and less crispy.)

  3. Surcharge:

    Quarter each quesadilla after cooking and serve hot.

    Alternatively, if you want to cook and serve all the quesadillas at once: Transfer each quesadilla just as it’s done to a baking sheet in a 300°F oven to keep warm while you finish cooking the rest. Serve the tortillas on a center-table platter with salsa and some sliced ​​jalapeños, if you like.
