This cucumber salad is cool, crunchy, creamy, and everything (bagel spice) you want in an easy summer salad.

You know those days in midsummer when it’s too hot to cook? Those moments when just the thought of turning on the stove makes you feel like you need to take a cold shower right away? We’ve all been through that. These days the food I crave the most is a cucumber salad. It’s crispy, refreshing, light and absolutely no heat is required to make it. phew

I would recommend using Persian cucumbers for this salad as they are spicier, less watery and thinner and smoother compared to English cucumbers. You can choose to use one large cucumber or several smaller ones.

To maintain the flavor profile of the loaded bagel, this cucumber salad features red onions, capers, fresh dill, scallions, and a creamy sour cream dressing. I don’t know about you, but I like my bagels loaded with toppings, and that’s exactly why I’m throwing one more thing here.

You could Opt for mixing softened cream cheese into the dressing if you’re really playing with the bagel theme, but I found it a bit difficult to incorporate when testing this recipe. Not to mention, sour cream offers a tangy, sour flavor that plays well with the salad components.

ingredients

  • 3/4 Cup Full fat sour cream

  • 2 tablespoon fresh lemon juice

  • 2 tablespoon all bagel spicedivided, plus more for garnish

  • Kosher salttaste

  • Fresh ground black peppertaste

  • 1 large or 6 small Persians cucumberscut into 1/4-inch slices (about 5 cups)

  • 4 spring onionsEnds trimmed and thinly sliced

  • 1/2 Middle Red onionthinly sliced

  • 1/4 Cup freshly chopped dill

  • 1/4 Cup capersdrained and rinsed

method

  1. Make the dressing:

    In a small bowl, mix together the sour cream, lemon juice, and 1 tablespoon all the bagel seasoning. Season to taste with salt and black pepper. Stir and set aside.

  2. Combine the vegetables:

    In a large bowl, add the pickles, scallions, onions, capers, dill, and the remaining 1 tablespoon of bagel seasoning—this seasoning stays crunchier than the seasoning in the dressing, which I love.

  3. Arrange and serve the salad:

    Add the dressing and mix to combine. Serve immediately.

    The salad is best eaten immediately, but will keep fresh for about 2 days if refrigerated.
