In summer when corn is in season I look for an excuse to buy it, it’s so wonderfully cute! We’ve had it in chowder, salad, grilled and of course just on the cob.

Corn also makes a fabulous salsa.

The acidity from the salsa’s lime juice balances the sweetness of the corn. Paired with some jalapeño, red onion, cilantro, and oregano, it’s a feast of flavor.

While it’s not the kind of salsa that’s easy to balance on a chip (although that doesn’t stop us from trying), it’s great as an accompaniment to Southwestern dishes like tacos and enchiladas, or as a direct accompaniment to chicken or steak .

This corn salsa is great for a game day party or summertime potluck.

A friend told me that corn salsa is one of the most popular dishes at Chipotle. I am not suprised! (This one is better.)

This recipe uses fresh corn from the cob. You can also use thawed corn. You will need about 2 cups.

How to make corn salsa fast? Use a mini food processor or food processor to save time chopping the red onion, jalapeño, cilantro, and oregano.

ingredients

  • 2 ears of fresh corn on the cob

  • 1/2 cup chopped red onion

  • 1 jalapeño chili, seeded and chopped

  • 1/4 teaspoon ground cumin

  • 1/3 cup chopped cilantro, including tender stems

  • 2 teaspoons fresh oregano, chopped (or 1 teaspoon dry)

  • 1 teaspoon kosher salt

  • 2 tbsp lime juice

method

  1. Cook Corn:

    Shell the corn, cut or break the corn on the cob in two, and in a large, covered saucepan, steam the corn in about 1 inch (2.5 cm) of boiling water for 5 minutes, more or less depending on the tenderness of the corn. (Or you can microwave or grill the corn; use your favorite method of cooking corn.)

  2. Cut away cores:

    When the corn has cooled, cut the kernels off the cobs. The easiest way to do this is to turn a medium bowl upside down and place it in a larger bowl. Hold the stalk end of the corn on the cob and place the tip on the domed center bowl. Use a sharp chef’s knife to cut along the sides of the corn to snip off the kernels.

  3. Combine with other salsa ingredients:

    Place the corn kernels and the remaining ingredients in a mixing bowl. Throw to combine.

    Serve with fish tacos, chicken tacos, quesadillas, fajitas, or steak.
