Chipotle Grilled Chicken with Avocado Sandwich

Grilled Chicken with Avocado Sandwich seasoned with Chipotle. The fire of the chipotle chilli powder is balanced by the creamy, cooling taste of the avocado.

We were a non-barbecue family until recently.

The problem is that Sacramento summers start early and last forever, and after a month or two, cold food just becomes tiring.

That’s why I brought a grill home a few weeks ago.

Today’s BBQ experiment was this Grilled Chipotle Chicken with Monterey Jack Cheese and Avocados on Hamburger Buns. I loved it! As does my guinea pig recipe testers Molly and David.

By the way, I know there are probably some mayo haters out there. I tried it without mayonnaise and it was too dry. If you don’t like mayo, mash the avocados into a guacamole.

You need the creaminess of either the avocado or the mayo to balance the spiciness of the chili and the roughness of the grill bun.

Grilled Chipotle Chicken with Avocado Sandwich

ingredients

  • 3 tablespoon Extra virgin olive oil

  • 1 tablespoon lime juice

  • 1/2 teaspoon Chipotle Chili Powder (less or more depending on how much heat you want)

  • 1 lb boneless, skinless chicken breast (approx. 2 breast halves)

  • 4 small slices Monterey Jack Cheese

  • 4 puts Hamburger buns

  • 1 avocadopeeled, cored and sliced

  • iceberg or salad the preference

  • mayonnaise

method

  1. Make the marinade:

    In a shallow bowl, whisk together the olive oil, lime juice, and chipotle chili powder.

  2. Pound the chicken breast evenly:

    Place the chicken breasts between two sheets of wax paper. Use a meat mallet to pound the breasts to an even thickness of about 1/2 inch. Trim off excess fat. If you start with 2 half chicken breasts, slice each half in half so you have 4 pieces (to fit better in the buns).

  3. Marinate Chicken:

    Place the chicken breasts in the marinade, turning to coat. Cover with plastic wrap. Let marinate for at least 15 minutes, preferably an hour.

  4. Grilling chicken breast and rolls:

    Heat up your grill over high heat if you’re using a gas grill, or prepare coals for direct heat if you’re using charcoal. You can also use a cast iron grill pan on your stove top if you don’t have a grill.

    Grill the chicken pieces for a few minutes on each side until cooked through. Once you have cooked and flipped the chicken pieces on one side, add a slice of cheese to the chicken. Cover the grill for half a minute to melt the cheese.

    Roast the buns on the grill as well.

  5. Assemble:

    Assemble the sandwiches – bottom bun, chicken with melted cheese, avocado and lettuce, mayonnaise on the top bun.
