Fold the chopped chipotle into the burger mixture, shape into patties and grill. Top the burgers with melted jack cheese, sliced ​​avocados, and some cilantro. If you want even more spiciness, double the amount and add roasted poblano chilli strips.

What are chipotle in adobo?

Chipotle peppers are ripened red jalapeño peppers that have been smoked until they have dried and lost most of their moisture (a process that can take several days). Adobo sauce is a thick, flavorful, slightly flavorful sauce. “Chipotle in Adobo” is simply chipotle peppers that have been steamed and wrapped in adobo sauce.

Look for chipotle in adobo in small cans or jars in the canned goods section of your grocery store or with the Mexican condiments. If you’re not going to use the entire can, place the chipotle in the adobo sauce in a small airtight container and refrigerate. They can be kept for several months.

ingredients

  • 1 1/2 lb ground beef

  • 1/3 Cup Oniongrated

  • 2 to 4 chipotle pepperchopped (from canned chipotles in adobo), depending on how much chilli spiciness you like

  • 1 tablespoon Spanish spice and marinade mix

  • 1 teaspoon kosher salt

  • 1 teaspoon ground cumin

  • 1 teaspoon black pepper

  • 6 Hamburger buns

  • 6 slices Jack Cheese

  • 2 avocadoscut

  • chipotle hot sauce, taste (we use Tabasco brand)

  • 1/3 Cup corianderchopped (for garnish)

  • 2 poblano chili peppers (Optional)

method

  1. Roast the (optional) poblano chiles

    When you add poblano chiles to your burger, you need to roast them first. Brush the poblanos with some oil and grill or broil until black on all sides. Alternatively, you can place the plain, unoiled peppers directly on a gas stove, turning as needed until black on all sides.

    Place the blackened peppers in a covered bowl to steam, about 15 minutes. Peel off the charred skin and remove any seeds. Cut into thick strips and mix with some vegetable oil and salt and set aside.

  2. Make the chipotle burger mix

    In a large bowl, combine ground beef, shredded onion, chopped chipotle, adobo sauce, salt, cumin, and black pepper. Mix gently until the ingredients are combined. Don’t mix too much or the burgers will be chewy.

  3. Shape burger patties

    Shape the burger mixture into 4-6 patties, about 1/4 pound to 1/3 pound each. Make a shallow indentation in the center of the patties to keep the burgers from rising while grilling (read why this works here).

  4. Prepare the grill

    Prepare a gas or charcoal grill for grilling over medium-high heat, or until you can place your hand about 1 inch over the grates for 1 second.

  5. Grill burgers

    Place the burgers on the grill and cook with the lid closed for 6-7 minutes. Lift the lid, flip the burgers and grill with the lid closed for an additional 6-7 minutes depending on how hot your grill is and how well done you prefer your burgers to be. Cook until the internal temperature is 140°F for Medium Rare or 160°F for Well Done.

  6. Add the cheese and grill the buns

    When the burgers are almost done, place a slice of jack cheese on each patty and close the grill lid. The cheese should melt in just over a minute.

    If you want toasted burger buns with your burgers, toast them after flipping the burgers. Be careful not to burn the buns; When lightly toasted, place them on a tray near the grill.
