This easy Japanese-style celery stir-fry recipe uses chili-infused oil and soy sauce to add tons of flavor to the celery.

Celery. We take it for granted, don’t we? It adds crispness to potato salads and flavors chicken broth and turkey stuffing; it is always the bridesmaid, never the bride.

That’s why I was intrigued when I saw a recipe for Celery Stir-Fry in my friend Nancy Hachisu’s Japanese Farm Food cookbook, a simple celery stir-fry with chili oil and soy sauce.

We’ve found that the best way to julienne celery is to cut off the root end and any part of the celery beyond the main stalk. Cut the stalks in thirds or quarters if they are very long, then slice each of these pieces in half lengthwise. This gives you a manageable, flat surface to cut matches with.

Nancy’s original recipe calls for the use of a high quality canola oil (another name for canola oil) and/or light sesame oil. We added a little bit of dark sesame oil at the end, which was absolutely gorgeous, so you might want to try that too.

ingredients

  • 2 tablespoon good quality rapeseed oilRice bran oil or other cooking oil

  • 3 small dried chili peppersbroken in half (can substitute 1/8 teaspoon red pepper flakes)

  • 4 cups julienned celery (cut into pieces about 2 cm long)

  • 1 to 2 tablespoon soy sauce (taste)

  • 2 to 3 drops dark sesame oil (Optional)

method

  1. Heat oil and chili:

    heat that up oil and chillies Heat in a wok or skillet over high heat for 90 seconds or until chilies are fragrant and seeds are sizzling.

  2. Add celery, soy, soy sauce, and optional sesame oil:

    add the celery and stir-fry for 3 minutes. add the soy sauce and fry for another minute. With drizzle dark sesame oil (if used). Serve hot or at room temperature.
