A delightful Cajun seasoning composed of thyme, paprika, garlic powder, and paprika is sprinkled over the corn before it is  basted with salted butter and cooked to perfection. Use unsalted butter to prevent overly salted corn if you’re using store-bought Cajun seasoning, which might be on the salty side.

ingredients

  • 8 tablespoons (1 floor) Salted butter
  • 8th ears fresh Cornshells removed
  • 1 tablespoon cajun spicehomemade or store bought

For garnish

  • 1/4 Cup Cotija cheese
  • 1/4 Cup fine chopped coriander

method

  1. Make sure the grill is preheated to a high temperature, reaching about 550°F.
  2. Melt the butter in the meantime by placing it in a small saucepan over medium-high heat and closely monitoring it for 1 to 2 minutes, or until it has completely melted. Remove from the stove.
  3. Butter the corn:

    Place the corn on a large platter or plate. Set aside 2 tablespoons of melted butter, you will use this later. Using a heatproof pastry brush, brush each piece with the remaining butter.

  4. Flavor Corn:

    On the corn, evenly distribute the Cajun seasoning.

  5. Grill Corn:

    Using tongs, place each ear directly on the grill grate.

    Cook the corn for 10 to 15 minutes, flipping it every 2 to 3 minutes, to ensure that each side is fully roasted. Brush the corn with butter as it is cooking. The corn is sufficiently cooked when the kernels are soft when lightly squeezed with tongs.

  6. Garnish and serve the corn with additional butter:

    Place the cooked corn on a serving plate and set aside. With a pastry brush, brush the remaining butter onto the corn.

    Serve immediately, garnished with Cotija cheese and coriander.

  7. Storage:

    You can store leftovers in an airtight container in the refrigerator for up to 3 days.
