A Louisiana-style chicken salad with tartar sauce, Tabasco sauce, and some Cajun seasoning.

This little chicken salad went on the market. This little chicken salad stayed at home. This little chicken salad took a tour of Louisiana and walked away with a cheeky hot tartar sauce and who knows where they’ll end up?

In my tummy! Or your tummy if you decide to make this Cajun twist on the classic chicken salad.

While this recipe calls for poaching raw chicken breasts, you could just use leftover cooked chicken.

ingredients

  • 1 lb Skinless and boneless chicken breast

  • Salt

  • 1/2 Cup mayonnaise

  • 2 tablespoon Mustard

  • 1 tablespoon Apple Cider Vinegar

  • 2 teaspoon paprika

  • 1 teaspoon Cajun or Creole spice

  • 1 teaspoon prepared horseradish

  • 2 big hard boiled eggschopped

  • 1/2 Cup chopped celery

  • 1/2 Cup chopped green pepper

  • 1/4 Cup chopped green onion

  • Tabasco or other hot sauce, taste

method

  1. Poach the Chicken:

    Place a 2-quart saucepan with well-salted water over high heat. When the water is boiling, cut the chicken breasts into large (2 1/2 inch) pieces. When the water boils, add the chicken. Return to a simmer, then turn off the heat and cover the pot. Let it sit for 15 minutes (time) or more while you prep everything else.

  2. Prepare the dressing, mix in the eggs and vegetables:

    In a large bowl, combine the mayo, mustard, vinegar, paprika, Cajun seasoning, and horseradish. Mix in eggs, celery, green peppers, spring onions.

  3. Dice chicken, mix with salad:

    Remove the chicken from the Wilderwasser* with a slotted spoon and dice. Mix it with the rest of the ingredients. Season to taste with salt and hot sauce. Chill before serving.

    Serve over buttered salad or as a sandwich between two slices of bread.

    *The resulting poacher liquid is a light, salted chicken broth. You can save it and pour it into a mug and drink it as a light soup if you like.
