Years ago my mother, Suzanne McCord, was diagnosed with breast cancer.
I get tired of riding my bike to work and my last major trip was Napa which is only an hour away. In fact, her main concern after the diagnosis was that the surgery would get in the way of her cycling.
After hearing from Mom, I got down to business and researched how I could help use what I do best – food. I wanted to put something together that was easy to make and full of flavor. I developed this recipe.
This easy fruit salad is great as an appetizer or as a dessert. The fruit is lightly glazed with a simple syrup or agave syrup.
Ginger, some lemon and some savory thyme, which goes wonderfully with summer fruits, emphasize the acidity of the berries and the sweetness of the stone fruit.
I named this salad Suzanne in tribute to my awesome kicking ass mom.
Blueberry Peach Fruit Salad with Thyme
ingredients

4 peaches

4 nectarines
-
1 cup blueberries

2 teaspoons fresh, chopped thyme

1 teaspoon grated ginger

1/4 cup lemon juice

1 teaspoon of lemon zest

1/2 cup water

1/4 cup sugar (you may be able to skip it all depending on how sweet the fruit is)

Or 1 tablespoon of agave syrup instead of water and sugar

Making Simple Syrup:
If you use water and sugar, add them to a saucepan and bring to a boil and the liquid will reduce by half to a simple syrup. Let cool down.

Combine ingredients:
Cut the peaches and nectarines into small pieces and place in a bowl with the blueberries. Pour the cooled sugar syrup or agave syrup over it. Add thyme, lemon juice, lemon zest and ginger.

Chill for 1 hour:
Stir and cover with cling film, put in the fridge and leave to macerate for an hour. Surcharge.
Luckily, her surgery was a success and with doctors finding no need for chemotherapy or radiation, she is on the fast track to recovery; something she credits her annual mammogram for allowing her to get them early.
