Brunch Party Bread Pudding Casserole! With cream cheese, maple syrup and juicy blueberries.

The secret of a successful brunch host is to prep as much as you can the night before, right?

Just pop it in the oven an hour before you need it on your brunch morning!

While you can use regular sliced ​​bread for this recipe, I find that using a small rustic Italian or French bread for the loaf improves the texture and presentation immeasurably.

Coat the bread cubes with cream cheese and blueberries and saturate with an egg, milk and butter mixture. Serve with maple syrup like blueberry pancakes!

ingredients

  • 1 loaf rustic White breadCrusts removed, bread cut into 1-inch cubes (about 10 cups)

  • 4 ounces cream cheesecut into small cubes (approx. 1 cup)

  • 2 cups fresh or frozen blueberriesdivided (if using frozen berries, thaw and drain them first)

  • 8th eggsbeaten

  • 1 1/2 cups milk

  • 1/4 Cup melted butter

  • 1/4 Cup maple syrup plus more to serve

method

  1. Preheat the oven, prepare the casserole dish:

    Preheat oven to 350°F. Grease an 8 or 9 inch square baking dish.

  2. Layer bread cubes, cream cheese and blueberries in a casserole dish:

    Place half of the bread cubes in the dish. Scatter the cream cheese cubes and half the blueberries over the bread. Top with the remaining bread cubes and blueberries.

  3. Mix eggs, milk, maple syrup, and melted butter in a large bowl and pour over the bread mixture:

    Cover and refrigerate overnight to prepare and continue baking the next morning.

  4. Bake:

    Bake at 350°F until a knife inserted in the center comes out clean, about 1 hour to 1 hour 20 minutes. Cover with aluminum foil if the edges brown too much during baking.

  5. Surcharge:

    Let stand 10 minutes before serving. Cut into squares to serve. Serve with additional maple syrup.
