Bisquit Coffee Cake with Apples is a delicious (and easy) breakfast or brunch. A brown sugar cinnamon crumble topping adds extra sweetness. Perfect for serving with a hot cup of coffee!

A favorite family ritual growing up was this Sunday morning apple coffee cake. My dad made it for his six greedy kids and we all asked him to layer the brown sugar sprinkles on top.

Dad used biscuit for this coffee cake, a baking mix that was popular then and is still popular today. You don’t have to worry about baking soda or baking soda as the mix comes with its own leavening.

Then add slices of peeled, tart green apples to the batter and top with a brown sugar crumble topping, a few dabs of butter and bake!

Given the size of our family, my dad would usually double the recipe and bake it in an 8″ x 13″ Pyrex pan.

It was then and still is one of my favorite coffee cakes of all time.

The best apples for apple coffee cake

Choose apples that will hold their shape when baked. The recipe calls for a tart apple, and these tart apples hold up well in the oven.

How to store or freeze coffee cake

After cooling, store the freshly baked coffee cake covered for 1 to 2 days at room temperature. After day 2, store the cake in the fridge for up to 5 more days.

Freeze the cooled cake, wrapped in a layer of cling film and a layer of aluminum foil, for up to 3 months. Or freeze individual slices wrapped in the same way.

ingredients

Cake:

  • 2 cups baking mix, such as biscuit

  • 2/3 Cup milk or water

  • 2 tablespoon sugar

  • 1 big egg

  • 1 cake green Applecored, peeled, sliced

topping:

  • 1/3 Cup baking mix, such as biscuit

  • 1/3 cup packed Brown sugar

  • 1/2 teaspoon Cinammon

  • 4 tablespoon Butter, thinly sliced

method

  1. Preheat the oven and prepare the pan:

    Preheat oven to 400°F. Grease an 8-inch square skillet or a 9-inch round skillet.

  2. Mix the ingredients:

    In a large bowl, mix together the 2 cups of cake mix, water or milk, sugar, and egg until well combined. Spread the batter in the pan. Spread the apple slices evenly over the cake.

  3. Make the topping:

    In a medium bowl, combine 1/3 cup Bisquick Mixture with the brown sugar and cinnamon. Spread the topping mixture over the batter in the pan. Scatter slices of butter all over.

  4. Bake:

    Bake at 400°F for 20 minutes or until golden brown and a tester inserted in the center comes out clean.
