Baked Chicken Marinara – Chicken chunks coated in parmesan and breadcrumbs, fried and topped with tomato basil marinara sauce and topped with melted mozzarella. A flavorful alternative to chicken parmesan.

This baked chicken marinara dish is my mom’s version of chicken parmesan where chicken pieces are breaded, fried, drizzled with sauce, topped with mozzarella, and baked.

However, instead of beating up thin chicken breasts, my mom uses tastier boneless, skinless chicken thighs. She adds lots of fresh basil to the marinara tomato sauce.

ingredients

Sauce:

  • 2 tablespoon Extra virgin olive oil

  • 3 shallotspeeled, finely chopped

  • 4 Garlic clovesfinely chopped (about 4 teaspoons)

  • 1 (28-Ounce) can crushed tomatoes

  • 2 teaspoon dried oregano

  • 1/4 teaspoon crushed red pepper flakes

  • 1/2 Cup chopped fresh basil

Chicken:

  • 3/4 Cup breadcrumbs

  • 3/4 Cup grated parmesan cheese

  • 1/2 Cup all purpose flour

  • 2 big eggsbeaten

  • 9 Boneless chicken thighs (skinless or skinned, your preference) if large chunks then cut in half

  • 4 tablespoon Extra virgin olive oil

  • 3/4 Cup grated mozzarella cheese

method

  1. Make the sauce:

    Heat 2 tablespoons olive oil in a heavy large saucepan over medium-high heat. Add the shallots and sauté until tender, about 4 minutes. Add the garlic and cook a minute more.

    Add the tomatoes, oregano, and crushed red pepper flakes. Simmer for about 10 minutes until the sauce thickens. Stir in the basil and season with salt and pepper. Put aside.

  2. Bread chicken pieces:

    Mix the grated parmesan and breadcrumbs in a shallow bowl. Put the flour in another separate bowl and the beaten eggs in another bowl.

    Dredge each chicken piece first in flour, then in the beaten eggs, then dredge in the breadcrumb mixture.

  3. Preheat oven to 350°F.
  4. Roast Chicken on the Stove:

    Heat 4 Tbsp olive oil in a heavy, large non-stick skillet over medium-high heat.

    Working in batches if necessary, add chicken and sear until golden and cooked through, about 4 minutes per side.

  5. Bake chicken with gravy and cheese:

    Place chicken pieces on an ovenproof serving platter. Spoon sauce over chicken pieces. Sprinkle with mozzarella cheese.

    Bake for 10 minutes at 350°F or microwave on high heat for 10-20 seconds until cheese is melted.
