This has to be one of the easiest ways to cook asparagus. Simply cut off the ends, place on a foil-lined baking sheet, toss with olive oil, sprinkle with salt, pepper, and parmesan, then bake until done. I eat them like french fries. Addictive? Yes.

Choose fresh asparagus

Look for asparagus spears that are a rich green color that lightens at the bottom of the stem. The stems should be firm, not wilted or brittle with split ends. The tips should fit snugly and not spread out.

Asparagus can vary in size, so choose spears that are consistent in length and thickness for even cooking time.

Store fresh asparagus

The best way to store fresh asparagus if you’re not going to cook them right away is to treat them like you would a bouquet of flowers, including trimming off the undersides a bit. The trimmed ends need to be kept moist, but the stems need to be kept dry.

Place fresh asparagus spears in a jar and add enough water to submerge the bottoms of the spears by an inch. Put a plastic bag over the jar and put it in the fridge. The asparagus should hold on for two to three days.

Alternatively, you can dampen a paper towel and wrap it around the bottom of the stems, then place the stems in a ziplock bag. Store in the crisper for two to three days.

For a little extra flavor, add a little garlic powder or freshly chopped garlic to the Parmesan cheese.

ingredients

  • 1 lb asparagus

  • 2 tablespoon Extra virgin olive oil

  • 1/2 teaspoon coarse or clumsy kosher saltor to taste

  • 1/8 teaspoon fresh ground black pepperor to taste

  • 1/2 Cup loose packed (40g) grated parmesan cheeseor to taste

method

  1. Prepare asparagus:

    Preheat the oven or air fryer, if you have one, to 400°F. Break or trim off the woody ends of the asparagus spears. For an extra touch, if you like, you can use a vegetable peeler to peel the skins from the base of the asparagus spears for a more elegant presentation.

  2. Add olive oil, salt, pepper, cheese:

    Place the asparagus spears on a baking sheet lined with aluminum foil and brush with olive oil. Sprinkle with salt, pepper and parmesan.

    If using the air fryer, brush the asparagus with olive oil and then place them in the fryer basket in a single layer. Sprinkle salt, paper and Parmesan on top.

  3. Bake:

    Bake at 400°F until cheese begins to brown, about 8-10 minutes.
