  • 1 tablespoon balsamic vinegar

  • 1 cup cherry tomatoes, halved or quartered

  • 1/4 cup sliced ​​green olives

  • 1 tablespoon drained capers

  • 2 tablespoons chopped fresh parsley

  • 1/4 teaspoon salt

  • Freshly ground black pepper to taste

  • 4 slices of hearty wholemeal, homemade bread or another bread of your choice

  • 2 avocados, halved, seeded and sliced

  • 4 lemon wedges

  • 2 tablespoons toasted pine nuts

method

  1. Make the relish:

    In a bowl, stir together the red onion, lemon juice, and vinegar. Let sit for 5 minutes while you chop the tomatoes. Add the tomatoes, olives, capers and parsley to the bowl. Stir in salt and pepper to taste.
