Easy and healthy! Avocado Chicken Salad with avocado, chopped cooked chicken, apple, celery and onion. No mayo!

The concept is simple — a quick, easy chicken salad that uses mashed avocado as a binder instead of the more traditional mayonnaise.

That was my idea when I set out to replicate the success we’ve had with our Avocado Tuna Salad. It would be a “sequel” of sorts, hopefully more of a Toy Story 2 sequel (brilliant!) than the second Bridget Jones (yikes).

The unexpected ingredient in this chicken salad is chopped apple. Apple adds sweetness, acidity, and crunch to the chicken salad, helping to round out the flavors.

Avocado replaces the fat in the mayonnaise but not the flavor. So we add salt, pepper and a good dose of lime juice. I also add lots of chopped fresh cilantro, you could just use parsley instead.

ingredients

  • 1 Cup finely chopped boiled chicken

  • 1 ripe avocadopitted and peeled (see Slicing and Peeling an Avocado)

  • 1 Applepeeled, cored and finely chopped

  • 1/4 Cup finely chopped celery

  • 1/4 Cup finely chopped Red onion

  • 2 tablespoon finely chopped coriander or parsley

  • 2 teaspoon lime juice or a tablespoon of lemon juice

  • 1/2 teaspoon kosher salt

  • prize fresh ground black pepper

  • sandwich bread or lettuce

method

  1. In a medium bowl, combine chicken, avocado, apple, celery, and red onion. Gently mash the avocado with a fork and stir to mix well.

  2. Add cilantro or parsley, lime juice or lemon juice, salt and pepper. Add more lime juice or salt to taste. If the mixture seems a bit dry, you can stir in a teaspoon or two of olive oil.

    To store, place in a bowl and cover completely with plastic wrap so none of the chicken salad is exposed to the air. Keeps in the fridge for a few days.

    Serve on sandwich bread, toast, or lettuce (I recommend arugula or watercress for added zest).
