Asparagus Artichoke Salad! A light spring salad of grilled or roasted asparagus with marinated artichoke hearts and cherry tomatoes.

Although we can get asparagus mostly year-round, I usually only get them in the spring when they’re in season.

So we buy asparagus and more asparagus. Here’s a recipe for what to make with our long green friends when you’re tired of everything else. (Thanks to Whole Foods’ deli department for the idea.)

Thick spears of asparagus are easier to fry or grill than thin ones without becoming too dry or overcooked.

ingredients

  • 1 big shallotthinly sliced, or a few thin slices of red onion

  • 2 to 3 tablespoon lemon juice

  • 2 lb tight asparagusrinsed, tough ends broken off and discarded (or kept in reserve)

  • 2 tablespoon Extra virgin olive oildivided

  • Salt

  • 1 teaspoon garlic powder

  • 1 pint grape or cherry tomatoeshalved

  • 1 (15-ounce) glass good quality marinated artichoke hearts, quartered or halved

method

  1. Soak the sliced ​​shallots in the lemon juice:

    Do this while you prepare the rest of the salad.

  2. Fry or grill asparagus:

    To roast the asparagus, preheat the oven to 200°C. Brush the asparagus spears with 1 tbsp olive oil and salt well. Place in a single layer in a foil-lined skillet and sauté until lightly browned and tender, 8-10 minutes.

    To grill the asparagus, prepare your charcoal or gas grill for high direct heat. Brush the asparagus with 1 tbsp olive oil and sprinkle with salt. Grill them between 5 and 10 minutes until nicely charred and tender.

    Remove the asparagus from the oven or grill and cut into bite-sized pieces.

  3. Mix and serve the salad:

    Place the asparagus and remaining ingredients in a large bowl and mix together.

    Add as much marinating liquid from the artichoke jars as you like. Serve chilled or at room temperature.
