Kid-Friendly Chicken Apple Quesadillas! Toasted flour tortillas with melted cheese, apple slices, chicken and salsa.

I was tasked with providing lunch for several children (ages 4, 6, 7 and 9) a few days ago and made them one of my favorite quickie lunches – chicken and apple quesadillas.

Kids love apple quesadillas

The kids devoured them, and one of them, Teddy, cried out loudly after the first, “Elise, you MUST put this on your website!” The others nodded in agreement while chewing eagerly.

Quesadillas are usually made with just tortillas and cheese (corn tortillas are commonly used in Mexico, flour tortillas are commonly used closer to the border).

I started adding thin slices of apple to my quesadillas decades ago. Of course, apples and cheese generally go well together, and they go just as well together in a quesadilla.

Add in some strips of cooked chicken and some salsa and you have a perfect easy meal!

ingredients

  • 4 flour tortillas (about 8 inches wide)

  • 1 cup cooked, shredded or chopped chicken

  • 1/4 lb cheddar or Monterey Jack cheese, sliced ​​or grated

  • 1 apple, sliced

  • 1/4 cup salsa

method

  1. Heat the tortilla until puffy:

    Heat a large skillet over medium-high heat. Place a tortilla in the pan.

    Turn it a few times with a spatula, then let it heat in the pan until air pockets form and parts of the tortilla begin to puff up. flip it again

  2. Add cheese and chicken, fold over:

    Place cheese slices on half of the tortilla, at least 1/2 inch from the edge of the tortilla. Put the chicken pieces on the cheese. Fold the tortilla in half like an omelet and press down on the folded tortilla with the spatula. Reduce the heat to medium.

    If you have enough space in your pan, you can add a second tortilla to the pan at this point to begin heating.

  3. Add apple slices and salsa, cut into triangles:

    When the cheese in the quesadilla has melted, place the quesadilla on a cutting board. Open it wide and layer apple slices and salsa on top.

    Fold the tortilla back over and cut into 3 triangles as if you were cutting a cake. (You don’t have to cut the quesadilla into triangles, it just makes it easier for kids to eat.)

  4. Repeat with the remaining tortillas
