Angel Hair Pasta With Garlic Herbs and Parmesan

Easy pasta side with angel hair, with olive oil, garlic, herbs and parmesan. Simply! Cooks in 10 minutes.

Years ago, when I was a college student living alone, one of my favorite dishes was spaghetti pasta tossed with a little olive oil, parmesan, and rosemary.

In this recipe, we use rosemary, oregano, and thyme, hardy herbs that grow outside my kitchen window year-round. You could easily use other herbs. If you’re using finer herbs like tarragon or basil, I’d recommend not heating them in the oil, but tossing them with the Parmesan cheese at the end.

This recipe can easily be doubled. If you use fine herbs like basil or tarragon, toss them in at the end with the parmesan.

ingredients

  • 8th ounces angel hair paste

  • Salt, taste

  • 1/4 Cup Extra virgin olive oil

  • 2 tablespoon finely chopped fresh herbs such as rosemary, thyme, oregano

  • 1/4 cup chopped fresh parsley

  • 3 cloves garliccut

  • 1/8 teaspoon chili flakesor more to taste

  • 1/2 to 1 teaspoon fresh ground black peppertaste

  • 1/2 Cup grated parmesan cheese

method

  1. Prepare boiling water for pasta:

    Bring a large pot of salted water to a boil. (1 tablespoon of salt per 2 liters of water).

  2. Cook garlic and herbs:

    While the water is heating in Step 1, heat the olive oil in a small saucepan over medium-high heat. Add the sliced ​​garlic, chilli flakes, finely chopped herbs and chopped parsley to the oil. Cook for a minute or until the parsley has wilted and the garlic gives off a strong fragrance. Remove from stove.

  3. Cook pasta:

    The angel hair paste will cook in about 2 minutes once it starts, so get everything ready. Once the water is boiling, add the pasta. At a bubbling boil, cook until al dente. Remove 1/2 cup of the pasta cooking water and set aside. Drain the noodles and rinse briefly with cold water, just enough to stop the cooking but not so much that the noodles get cold. The noodles should still be quite warm.

  4. Combine pasta and herbs:

    Place noodles in a large bowl. Pour the herb-garlic sauce over the pasta and mix gently. Sprinkle Parmesan cheese and freshly ground black pepper over the pasta and toss gently. If the noodles are a little sticky, add some of the noodle cooking water to loosen them.

    Serve immediately as a side dish. Good to warm up as you progress.
