Homemade Italian Amaretti Cookies! Small, crunchy, chewy inside, macaroon-like cookies made with almond flour, egg white, and sugar.

The first time I ate Amaretti biscuits was in St. Mark’s Square in Venice. I stumbled across a small cart selling a variety of ornate confections.

Among all the tinsel and colored sugar, my eye caught a small cellophane bag tied with a small piece of gold ribbon. Inside were small, light-colored biscuits that looked ordinary but tempting nonetheless.

Amaretti are small biscuits that are light as a feather yet have an intense sweet almond flavor. They’re fluffy, tender, and oh so easy to make!

This Amaretti Cookies recipe takes no more than 4 minutes and bakes quickly.

They taste amazing on their own, but I’ve also been known to grind them into a powder and add it in place of the cinnamon and spices to flavor pumpkin bread, or add them to the batter of vanilla cake or pancakes to add depth of flavor.

ingredients

  • 2 1/2 cups almond flour -or- 3 cups blanched slivered almonds, finely ground

  • 1 1/4 cups baker sugar (extremely fine sugar)

  • 3 egg white

  • 1/2 teaspoon vanilla extract

  • 1 teaspoon almond extract

  • extra sugar Per Dust off

method

  1. Prepare the oven and baking sheet:

    Preheat oven to 300°F and line baking sheets with parchment paper.

  2. make dough:

    In a food processor, pulverize the almond flour and sugar. Add the vanilla and almond extract and pulse for a few seconds. Add the eggs one at a time and continue to process until the batter is smooth.

  3. Spread the dough on the greased baking sheet, sprinkle with sugar:

    Place teaspoons of the dough on the baking sheet lined with parchment paper and dust with sugar.

  4. Bake:

    Bake at 300°F for 24-30 minutes or until golden brown.

    Let cool completely before serving.

    They’re a bit chewy at first, but after a day or two they get nice and crispy.

    Store cool and dry. (Note: I usually underbake mine as I like them chewy. If you prefer, bake for about 20-24 minutes.)
